Globally recognised ramen restaurant Mensho Tokyo finally landed in Sydney in 2024. It utilises local ingredients to craft both traditional and innovative bowls of ramen with noodles made from Australian wheat, milled in-store, for the ultimate chewy texture.

Must-try bowls include a lobster bisque ramen topped with a whole lobster, a rich toripaitan chicken ramen, a vibrant duck and matcha ramen, a creamy vegan macadamia tantanmen, and a chocolate wagyu steak and shoyu truffle ramen, as well as a selection of rice bowls and side dishes. 

You can’t book here, so if you’re visiting at a peak time, be prepared to queue—this is world-renowned ramen, after all.

Hakata Gensuke first made its way to Australia via Melbourne, where it has a cult following alongside its locations in Perth and also, now, in Sydney.

The award-winning signature tonkotsu ramen is known for being rich and silky, using premium pork bones for a flavourful and nourishing broth. The menu also has rich fried garlic and black sesame-topped ramen, spicy bowls, and lighter shio-style ramen, plus gyoza and a few familiar snacks. With only 40 seats and no bookings, be prepared for a short queue for your ramen.

Known for their flavour-packed miso ramen, Nichi Getsu Dō is an izakaya-style ramen spot in the Sydney CBD. The broth strikes a perfect balance between thick and thin, leaning towards the lighter side. 

The OG bowl is topped with onion, corn, and savoury pork mince, or order the ‘special’ version for an extra soft-boiled egg and a fat slice of grilled pork chashu. There’s also a spicy riff with a punchy chilli charge, and a hot tantanmen edition filled with a creamy and nutty sesame sauce. 

This one isn’t available to book, but you can swing by for lunch or dinner Monday to Saturday, or order online for pick-up.

They offer super-rich tonkotsu-based broths with lighter shoyu, shio and miso variations. The charred pork here has an extra crispy layer, and the mouth-watering kakuni (braised pork belly) is worth splashing out for added protein. Yasaka takes walk-ins only or you can order online.

Ichi–Ban Boshi

The team at Ichi-Ban Boshi first opened their doors in Bondi Junction in 1998, back when people had barely even heard of ramen. They’re pioneers of the Japanese food scene and made a bit of a splash by selling fresh, handmade ramen and gyoza to the Eastern Suburbs.

They still take their craft incredibly seriously, making ramen noodles daily from Australian wheat to a formula that's perfectly suited to accompany the thickness of their broth. Because of this, they only make 30 bowls of their signature tonkotsu per day, which people generally queue around the block for. 

Hit up the Ichi-Ban Boshi Express in The Galeries' lower ground floor food court for your takeaway fix, or order delivery and pick-up online.

The smoky black garlic ramen is out-of-this-world-good with a creamy tonkotsu-based pork broth and bitey noodles crowned with juicy chashu pork and boiled egg. You can’t book, but you can order online.

Hakatamon Ramen

The bright red Dan Dan tonkotsu is worth a try if you like heat; it has an addictive spicy Sichuan flavour, and you can add toppings, including spicy miso, if you want even more kick. There’s even kids' ramen for little ones who struggle to finish a full bowl.

Ramen Zundo has been dedicated to the cause of getting good ramen into your belly for over a decade. The ramen here is freshly made every day from a twelve-hour pork bone tonkotsu base, so it's packed with collagen and rich in texture and flavour, but they also do a sizable vegetarian offering.

Varieties on offer include original, black with a roasted garlic oil, red with chilli paste, and a gyokai (seafood) blend. Noodles are crafted in-house and are al dente so they get slicked in the soup. There’s a long list of add-ons too, so you can customise your perfect bowl.

Manpuku is a local Chatswood favourite that opened their second location in 2016 after the success of the original ramen shop in Kingsford. Chef Hideto Suzuki currently has over 10 ramen dishes to choose from. 

Ramen is done by the book here, with a clear chicken-based broth, a rich pork-based broth, and some vegetarian options. The signature ramen comes with soy-based pork and chicken broth, a slice of seared chashu pork belly, marinated egg, blanched bean sprouts, bamboo shoots and shallots—because why mess with perfection?

The team at Rising Sun Workshop are known for their three superstar ramens: The Light, which is a concoction of Tasmanian free-range chicken and three fish dashi, The Darkness, which is made with pork and chicken broth, and, for vegetarians, The Monk, which is shiitake mushroom and sea kelp broth with chilli, roast garlic, miso pumpkin, marinated egg and nori. You can get bao buns, plates, sandos and bowls too. 

Rising Sun is also famous for its breakfast ramen, which is made with buttered toast bone broth, bacon, fried onsen egg, roast tomato, and green onion, and there’s a must-try viral creamy udon carbonara at dinnertime. Book online.

Kosuke Ramen has four walk-in-only locations across Sydney’s north and west, with the honten (flagship) restaurant in North Strathfield. It serves Tokyo-style ramen, with thin and thick noodles, and broths made in-house by Japanese owner-chef Kosuke and his wife.

They’re known for their smooth and rich pork broth, which is boiled and simmered over 20 hours, their 10-hour tori-gara chicken broth, and the shoyu broth that uses seven soy sauces and six premium natural salts to get its deep flavour. You can’t book here—line up or order online.

Self-titled ‘killer ramen’ joint Shinmachi is a top contender for the best vegan ramen in Sydney. They offer three plant-based ramen, including a tonkotsu-inspired bowl, a tantan black edition and a curry ramen. 

Don’t fret, there’s a bunch of meat-heavy tonkotsu too, including a classic, a creamy Hokkaido scallop with miso butter, and a WTF spicy version, layering intense levels of chilli with a hot broth and pork mince—try if you dare.

There’s over 15 expertly crafted ramen to choose from, with lighter shoyu, miso soy-bean or tonkotsu broth, which is left to deepen in flavour for 18 hours, providing a rich and silky base for spicy pork mince, chicken katsu, chashu, boiled egg, bamboo shoot, bean sprout and nori toppings.

You’d be forgiven for thinking Umami Dojo is bubbling away pink potions at their counter—it’s actually a syphon infusing their signature katsuo dashi ramen broth with dried bonito, mackerel and kombu (allow 15 minutes when ordering). 

The authentic little ramen spot is tucked at the end of Harris Street in Pyrmont behind an unassuming shopfront, and does just a handful of ramen with rotating specials. They mainly use chicken- and dried sardine-based broths, but also have a starchy four-mushroom soup for vegetarians, alongside gyozas, karaage dishes and viral warabi mochi. Chaco Ramen

Chaco Ramen in Darlinghurst is a tiny ramen-ya down the quiet end of Crown Street with a big reputation, and a Bondi Beach sibling with an added izakaya menu. The ramen menu here offers around seven bowls, with a soy-based ramen topped with chashu; the yuzu scallop ramen with John Dory and prawn wonton; and the cold tomato truffle ramen with seaweed broth, 63-degree egg, mizuna, semi-dried tomato and umeboshi among the standouts.

RaRa Ramen is a little oasis in a sea of pork broth for vegans and veggies who still want a slurp of the rich, soupy action. Their soy-based miso broth is packed with the creamy goodness that most other meat-free options lack, and the noodles—made in-house daily—soak up all the flavour.

But their plant-based options don’t mean they're lightweights in the carnivorous sector. The pork tonkotsu with grilled free-range pork chashu is the stuff of legend and frequently has patrons blocking up the pavement to get a taste. Book a table and order takeaway online.

This 20-seat ramen joint is by Head Chef Jacob Riwaka (Rising Sun Workshop and Cornersmith) and restaurateur Michael Mu Sung, who owns the produce-driven Farmhouse just across the road, so you can expect fresh-as produce and A-class ramen from these two hospo heavyweights. "Unique to Bones [is] our in-house production, barrelling, and storage of taré, which is the soy seasoning for the broths," explains Riwaka.

Pick between four options: double-style shoyu soup with scallop and prawn naruto, pork chashu and soy egg; chicken shiro broth with pork and chicken chashu; a seafood broth with scallop silk and  prawn balls; and a vegetarian shiitake mushroom broth with greens, soy egg and fried tofu. No bookings here—plan to visit early or late.

Expect a neat selection of tonkotsu with rich pork bases and thin noodles, a tori shoyu with savoury clear chicken broth, and two veggie ramens stacked with sauteed eggplant or eringi mushroom chasu, on top of seasonal specials.
